Who's Down for a Smoothie Bowl that Tastes like Summer?

Fair warning - I recently came across several enticing recipes for smoothie bowls and I just might go into recipe sharing overload as I try them over the next little while. I love a good, healthy smoothie/smoothie bowl. These recipes all come from foodrevolution.org which is an organization, "committed to healthy, ethical, and sustainable food for all." (from the "our mission" page on their website).


If you're down for a light, delicious meal that's the embodiment of summer, you'll definitely be down for this.

Review

This recipe is definitely a win - super simple, tasty, filling, and versatile, if you play around with the toppings. I love the texture added by the toppings. Chewing is an important step in getting your digestion going, which makes this more satisfying than a straight up smoothie that you drink. The ingredients are things you may already have in your kitchen, and if not, they're easy to find.


I'm very spoiled to have a fruit stand about a mile from my house that grows and sells strawberries so good you can hardly help but close your eyes and moan when you bite into them. I always buy enough so there's plenty to eat fresh and to cut up and freeze. Strawberries can be found in my freezer year-round. Of course, I used those, but store-bought would work fine, obviously.


I didn't have any hemp seeds on hand, so I added some chia seeds to the base in their place. Pumpkin seeds would be good, too. Coconut milk is my favorite, and I used it here, but if soy, almond, or some other plant milk is your jam, then go for it. I also didn't have any dates and didn't use any substitute. I'll bet the date would add a nice little sweetness and texture, so I'll try that next time.


The recipe is super easy to halve, which is what I did, since I was only feeding myself when I made it. Also, as a matter of preference, I didn't use as much of the toppings as the recipe shows.
